Dear Cesare,
I taught an Oz-lecture last semester. So you might
be interested in what I did.
Most importantly, it really depends on the applications
you want to teach.
My lecture was on applications of concurrent
constraint programming in computational linguistics.
As slides, I projected the following HTML script with
a beamer:

I think that Parts I, II, III of this script could also be
useful for a general introduction to standard (functional)
programming in Oz.
In what concernes constraint programming, you might prefer
some other material if you are not going for computational
linguistics. For instance, you might follow the Finite Domain
Programming tutorial of Schulte and Smolka. I intend to
present this stuff in a lecture during the winter 1999/2000,
too. So we might share material there.
